It is to the XVI century that the origins of the Castle of Bolgheri go back to the XVI century, since 1500 belonging to the family of the Counts of the Gherardesca. During renovations, remakes, restorations and enlargements, it was in 1700 that the wine-making cellars were built, which together with the entire castle and all the plots of land were transferred by inheritance to the family of the Counts Zileri Dal Verme. With an extension of 130 hectares, about fifty of which are currently vineyards, the estate reaches the famous avenue of cypress trees, so famous thanks to the famous verses of Giosuè Carducci's poetry.Between the rows of vines, at an altitude of seventy meters above sea level, and on soils rich in sand, limestone, clay and stony skeleton, you will find all the main varieties of vines provided for in the Bolgheri DOC regulations, such as merlot, cabernet franc, cabernet sauvignon, petit verdot and syrah. With southwest exposure and in a microclimate mitigated by the fresh sea breezes of the Tyrrhenian Sea, vine plants are grown from which fine and straightforward grapes of absolute quality are harvested. Grapes that arrive in the cellar to be processed in full respect of the most ancient traditions, exalting every little peculiarity of the varietal and every slightest shade given by the composition of the soil and the characteristics of the climate.Here, then, are the "Castello di Bolgheri" and the "Varvàra", both Bordeaux-style cuts, composed of a base of cabernet sauvignon grapes, to which are added merlot and cabernet franc. Wines, those produced by Castello di Bolgheri, spicy and fruity at the same time, then involving, round and silky, structured and textured, and finally always punctually distinguished by a note of extreme elegance and great finesse. Labels that bear the agronomic signature of Federico Zileri Dal Verme and the oenological signature of Alessandro Dondi, but above all bottles that contain all the best and deepest essence of the Bolgheri lands.
