Paul Bara's Reserve Champagne is a great expression of Bouzy's best characteristics. At the end of the delicate pressing, the fermentation takes place in steel tanks. The vins clairs rest a few months before the creation of the final cuvée and the second fermentation takes place in the bottle according to the Champenoise Method, with a stop on the lees for at least 24 months. Champagne is straw yellow in color with bright golden highlights, with a subtle and delicate perlage. On the nose it expresses aromas of citrus peel, fragrant fruit, candied fruit, soft hints of acacia honey and delicate spicy nuances. The sip is intense, long, soft, tense and of good aromatic complexity with a harmonious finish that closes on pleasantly refreshing sensations.
