Franciacorta Brut Nature "Cabochon - Double Zero" Monte Rossa is a special label of unparalleled prestige that represents the continuous search for excellence of a winery that has made the history of Franciacorta. A millesimate that comes from the ambitious avant-garde project to carry out the first fermentation in barriques, obtained from a precise selection of the most important crus of the estate. The bottle of the great occasions, of rare complexity and elegance, able to give a unique and exciting sensorial experience.

Monte Rossa "Cabochon - Double Zero" is a bubble with great personality in which Chardonnay (70%) and Pinot Noir (30%) combine in an extraordinarily harmonious oenological poetry. The grapes are grown in vineyards located in the morainic hills in the municipality of Bornato, in the province of Brescia, at the exact point where the thermal exchange of air currents between Lake Iseo and the Po Valley takes place, giving it an exceptional microclimate for vine cultivation. At the base of the winemaking process there is a meticulous selection of grapes from the five best crus of the estate, which are harvested by hand and taken quickly to the cellar, where they undergo a soft pressing from which only the flowering must is extracted. Each cru is vinified individually in 250 litre oak barrels where it remains for about six months.

The final blend of this fascinating cuvée di Monte Rossa is determined after repeated and expert tastings, in order to obtain the perfect taste. The blend is followed by a long ageing in the bottle, where the froth takes place and the wine is aged on the lees for about 48 months. During this phase an exceptional aromatic picture develops: herbaceous notes of lemon balm, sage and thyme blend harmoniously with fruity hints of medlars, apricots and citrus fruits, leaving room for a typically toasted finish of almonds and hazelnuts. In the mouth dominates a compact, fresh and creamy perlage, enriched by a long, mineral finish that brings out the unmistakable majestic and solemn character of this extraordinary nectar of Bacchus.
