Blend: 100% Sangiovese from Querciolina vineyard

Notes: The name derives from the Sassello thrush that shepherds at the Querciolina farm at the time of the harvest.

Harvest: Hand picked between 5th and 8th October, average quantity of grapes/hectare: 50 quintals.

Vinification: the grapes are vinified in small masses of 50 hl, at controlled temperature with maximum 30°C, with maceration of 16-18 days, accompanied by delicate pumping over and fulling.

Elevation and Ageing: 18 months of aging in barrels, followed by 12 months in small barrels between tonneaux and barriques (75% Allier - 25% Vosges). This is followed by a minimum period of 6 months in bottle

Organoleptic Analysis: Intense and dense ruby red colour with light garnet reflections. On the nose it expresses intense, persistent, very fine aromas with a great variety of fruity notes, morello cherry, blackberry, raspberry, supported by hints of oak and vanilla. The taste is elegant and complex, with a dense weave of smooth and pleasant tannins, united by fruity notes and spices, oak and vanilla, in a long and pleasant finish.
