PRODUCTION AREA
Spadaio and Piecorto are two estates that rise in the full territory of the Chianti Classico. The Piecorto Farm is located in the municipality of Poggibonsi on a small medieval village deriving from an ancient fortress of the Florentine Republic of the 12th century. The Fattoria di Spadaio instead is located in the area of ​​San Donato in Poggio at an altitude of 430m s.l.m. and it is where all the phases of wine production and aging take place. The two estates cover a total area of ​​90 hectares, of which 14 hectares intended for the production of wine and 20 hectares for the production of DOP extra virgin olive oil.

GROUND
The vineyards are located on a soil rich in skeleton in particular of Galestro and fine clay, which allow the optimal ripening for Sangiovese.

VARIETY
100% Sangiovese.

HARVEST
The harvest takes place at full ripeness in the months of September and October. The grapes, selected in the vineyard, are then taken to the cellar to be vinified.

VINIFICATION AND AGING
Fermentation takes place in concrete vats at a controlled temperature, favoring prolonged contact of the skins with the must. The refinement is 6 months in 225 l barriques and at least 3 months in the bottle.

13.5% Vol.

SENSORY CHARACTERISTICS
Ruby red color. On the nose there are hints of ripe red fruit, and then leave room for floral notes of violet. In the mouth it is enveloping with marked tannins. Persistent finish. A balanced Chianti Classico in everything.
