Winemaking technique:
The grapes, harvested in the first fortnight of the month of October, undergo a soft destemming, followed by alcoholic fermentation in stainless steel tanks at controlled temperature, variable between 25 and 28 ° C. able to extract the noble compounds of the skin with the help of periodic pumping over. Maceration on the skins lasts between 15 and 20 days.
Refinement:
The Morellino "Col di Bacche" is aged in steel containers, where the frequent and regular racking operations contribute to the aromatic and taste evolution of the product. It is not expected a long aging in bottle, in accordance with the youth of the product and the excellent drinkability.
Longevity:
within the year following the vintage "Col di Bacche" fully expresses all its peculiar characteristics. The complete maturation of the skin helps to make it pleasant and appreciable in all its nuances even for a few years after bottling.
Organoleptic characteristics:
ruby red color; intense and delicate aromas ranging from red fruit to delicate vanilla sensations, the tannin is soft and lively. Harmonic wine with a good structure.

Morellino "Col di Bacche" is a product that goes perfectly with first courses of Mediterranean cuisine rich in flavor and medium demanding, with grilled meats and also goes very well with cheeses and salted meats typical of the Tuscan Maremma.
