Winemaking technique:
The grapes, harvested in the second ten days of September, undergo a soft destemming and crushing, followed by alcoholic fermentation in stainless steel tanks at controlled temperature, variable between 28 and 30 ° C. favoring the extraction of phenolic substances with pumping over and délestages. The maceration on the skins lasts between 18 and 21 days.
Refinement:
The aging of the "Rovente" involves the use of French oak barriques, partly new and partly used, for about 12 months. In addition to the aging process in wood, before being released on the market the wine is aged for a few months in bottle.
Longevity:
The remarkable structure of the "Rovente" guarantees the product the possibility of being very long-lived. The polyphenolic background of the grapes allows, together with the aging in barriques, to obtain soft and deep tannins, intense and stable color, strong aromatic evolutions.
Organoleptic characteristics:
ruby red color; intense and strong aromas, from fresh fruit to lightly spicy notes: The dense and round tannins and a long and balanced finish complete the picture of this wine with its remarkable structure and typicality.
Gastronomic pairings:
The "Rovente" needs to be paired with the most demanding dishes of Mediterranean cuisine, based on game or mature cheeses.
