"Avvoltore is the most representative wine of the company, harvested from the vineyards planted on the homonymous Poggio. A clay-limestone soil that gives a strong and powerful tannin in the glass. The first vintage was born in 1988, the blend has since it has undergone very few changes and in recent years has always been characterized by these grapes: Sangiovese, Cabernet Sauvignon and Syrah. The name describes the Falco della Maremma, a bird of prey that often flies over these vineyards.
The powerful tannin cleanses the palate well from meat dishes, especially if stewed, or even aged and tasty cheeses. "

Harvest period: second and fourth week of September and first and second week of October. Fermentation in cement tanks, with temperature control and two pumping over per day for the first 10 days. The wine remains in contact with the skins for a further period of 15 days before being drawn off and immediately put into 225 liter barriques (new for 80%), where it carries out malolactic fermentation.
The aging in wood lasts about a year and in this period a racking is practiced. The wine remains in the bottle for six months, first
to be put on the market.
