Cervaro della Sala di Castello della Sala, an estate owned by Antinori, is an Umbrian white wine of great expression, but with a remarkable ability to accompany the most pleasant occasions, as well as to express solidity and presence on the most sought-after occasions.
The winery selects the best Chardonnay grapes and, to a lesser extent, Grechetto grapes from its own vineyards located at the estate itself, designed to make the most of the principle of gravity, without resorting to mechanical and invasive interventions. The musts, after 4 hours of skin maceration, are transferred by gravity to decantation tanks where they clear and the Chardonnay is then moved to barrique, where the alcoholic and malolactic fermentation takes place; Grechetto, on the other hand, is vinified in steel. After about 5 months the blending of the two wines takes place. Refinement takes place in the bottle for at least 10 months, after which the wine is considered ready to be marketed.
Cervaro della Sala has an intense straw yellow color with glazes tending towards gold. The fragrant flow that can be felt on the nose is intense, of yellow plum, citrus, acacia, toasted hazelnut, flint and tropical fruit. On the palate it is dynamic, elegant, structured, fresh, savory and with a solid and long finish. Of great strength, persuasive and always impeccable at every meeting.
