FRANCESCO CADINU GHIRADA FITTILOGHE CANNONAU 2021

This wine is the authentic expression of the Sardinian land and its traditions, it comes to life only from the grapes of the most precious vineyard, the GHIRADA, whose age exceeds 120 years. Located in the suggestive area of "Fittiloghe", which takes its name from the place where our vines thrive, this vineyard is a real treasure.
The peculiarity of the GHIRADA lies not only in its venerable age, but also in its management. The nature of the soil and the ancient winemaking tradition that animates the producers do not allow the use of mechanical means. Here, for ploughing, we do not rely on modernity, but respect the custom handed down over the centuries: a yoke of oxen is their faithful work companion.

From the effort of this labor of love, a wine is born which is the result of scrupulous attention to every detail. The harvest takes place in the first ten days of October, when the grapes reach their full maturity. We are in a magical place, 700 meters above sea level, where the sun, the wind and the crumbling granite soil give the vine everything it needs to express the best of itself.

The unique characteristics of this vineyard are reflected in the wine that Francesco and his wife Simonetta produce. The Cannonau, 100% proud protagonist, manifests itself with personality and intensity. The sapling training system, ancient and respectful of the plant, helps to keep the bond between the vine and the soil intact.

Once they arrive in the cellar, the grapes are vinified with extreme care. No temperature control, just the spontaneity of the fermentation process, which lasts about 15 days until the sugars run out. The pressing is delicate, the malolactic fermentation occurs naturally, following the rhythm of nature.

Finally, this Cannonau rests for 15 months in small chestnut barrels, where it refines its character and develops its complexity. The result is a wine that brings with it the history of a century-old vineyard, the work of a community and the love for the land. With only 1050 bottles produced, each sip is a unique experience, a journey through time and territory that we invite you to discover.
