VINIFICATION
A wine produced from vineyards located at 200, 300 and 450 meters above the sea level, with a different exposure. The production area is in Castelnuovo dell'Abate, in the valley of the Orcia river. The grapes are harvested by hand and placed in containers of 15-20 kg. The yield is 30-35 quintals per hectare. After ripening, they are immediately subjected to a rigorous selection process. The vinification takes place after spontaneous fermentation in wooden barrels. The wine remains in 30 hl oak barrels for 40 months and another 12 months in the bottle before being sold.

Much appreciated wine, one of the best in the area. Complex and elegant, it takes time to discover all its facets.
Notes of raspberry and cherry with herbs, cedar wood, raisins, ginger and mint. Rich and full but at the same time bright, with notes of wild berries perfectly balanced by a juicy acidity and silky tannins. Unique expression of Brunello di Montalcino.

Florentine steak, fillet, dishes with truffles or porcini

TASTING
To best enjoy it, it is recommended to decant the wine at least 1-2 hours before serving. Wine of great longevity, already remarkable if drunk now.
