Vinification: 100% in terracotta amphorae. Fermentation
"in red" with maceration on the skins for about 100 days
depending on the vintage.
Refinement: 100% in terracotta amphorae for 4/6 months
depending on the vintage, and a further 4 months in the bottle.
Aging capacity: up to 8 years.
Tasting notes: wine with an intermediate color between gold and
intense straw yellow. The nose expresses marked notes of
hawthorn, white peach and plum, with veiled sensation
of incense. In the mouth it releases balsamic notes of chamomile,
of tea and yellow flowers like broom. This wine supports
its pleasantness on an excellent freshness and tannin
well blended and thick. Pleasantly persistent finish,
dry and fresh, with almost sharp acidity.
Recommended pairings: Asian fusion cuisine, pappardella
with white hare sauce, fried fish or polenta with
stockfish.
