The Dom Pérignon champagne owes its name to the famous monk and procurator of the abbey of Hautvillers in 1668, Pierre Pérignon known as Dom Pérignon, who, according to the legend, created the first champagne in history. It will be Pierre Pérignon himself, in 1669, to transmit the technique to the Benedictine Thierry Ruinart. Thus, in 1729, Ruinart became the first Champagne house. From 1 January 2019, Vincent Chaperon took over from Richard Geoffroy as Chef de Caves of Dom Pérignon.

The second life of Dom Pérignon: after a prolonged aging for about 15 years, this champagne has like a second life. Fresh and lively in the bubble as only a recently disgorged champagne can be, it expresses an out-of-the-ordinary complexity and finesse. Majestic.

The fruity and slightly smoky elegance of the oyster enhances the precise, intense and vibrant character of Vintage 2003 Plénitude 2. The sapidity of the ham and the iodized and aromatic essence of the caviar release all the instant freshness of this vintage. Accompanied by the sweetness and acidity of passion fruit, the tasting of this Vintage 2003 Plénitude 2 will release all its intensity.
