In this Ribolla Gialla di Butussi the winemaking begins with the destemming and crushing of the grapes, followed by the immediate cooling of the must to 12°C. This allows the must to remain in contact with the skins for 12-16 hours, during which the natural enzymes present allow a gradual release of the aromatic components linked to the skin, thus emphasizing the structure and varietal characteristics of the vine. After this phase, the must is delicately separated from the skins and left to ferment intact, without any clarification, at a controlled temperature for approximately 14 days. Subsequently, the wine ages for 8 months in concrete barrels, where it further develops its complexity and harmony.

The wine has a straw yellow color and greenish reflections. The nose is characterized by a marked and typical floral scent. In the mouth it is dry, vinous and fresh, with a harmonious structure. It goes beautifully with cold appetizers, fried foods and dishes based on sea truffles and shellfish, representing an excellent choice to accompany fish-based dishes.
