ENDRIZZI GOLALUPO PINOT NERO 2021

Pinot Noir is the protagonist in this extraordinary wine, born in the historic vineyards of San Michele all'Adige. Here, among the old vineyards, the vines grow lush, carefully trained according to the Guyot method. The unique microclimate of this region favors early and complete ripening of the grapes, giving the wine a distinctive character.

The yield per hectare, limited to 50 hl, guarantees the concentration and intensity of the characteristics of Pinot Noir. The harvest is a careful and targeted process: in August, the late bunches are delicately cut to the ground to favor the concentration of energy in the remaining grapes. Subsequently, in the second half of September, the selected grapes are patiently sorted by hand and carefully collected into boxes.

In the cellar, the winemaking process is followed with artisanal precision. The crushed grapes ferment for 8 days at a controlled temperature in special winemakers, giving life to a must rich in complexity and aromas. Malolactic fermentation takes place in barriques, where the wine rests for at least a year, acquiring depth and roundness. Subsequently, the refinement period in 20 or 30 hl oak barrels for approximately 6 months gives further structure and complexity to the wine. The final touch of perfection comes with bottle refinement, which completes and enhances its quality.

The result is a wine with an intense ruby red color, with a finely fruity aroma that evokes notes of red currants and ripe cherries. On the palate, it stands out for its dry, spicy, rounded and persistent taste, giving an enveloping and satisfying sensory experience.

This wine of particular refinement and softness lends itself to elegantly accompanying both white meats and red meats, thanks to its versatility. Furthermore, it pairs perfectly with a selection of cheeses, enhancing their flavors and nuances.
