In the suggestive terraced vineyard, nestled near the majestic Monreale - Königsberg Castle, two excellent vines are carefully cultivated: Chardonnay and Pinot Noir. The vines, old and selected for the classic method, stand on inclined embankments, offering a breathtaking panorama and a unique terroir.

With a yield of 50 hl per hectare, the harvest is a moment of great attention and care. The bunches, subjected to tip cutting and thinning in July, are harvested by hand and delicately placed in boxes to guarantee their integrity until pressing.

In the cellar, winemaking takes place with the first fermentation carried out partly in barriques and partly in steel. The method used for refermentation in the bottle follows the classic rules established by the Trentodoc denomination. The maturation on the yeasts lasts for at least 36 months, giving the wine an extraordinary elegance. The "dosage" is reduced to a minimum to preserve the natural characteristics of the wine, resulting from favorable environmental factors and careful craftsmanship.

The result is a bright straw yellow wine, with a cheerful, minute and continuous perlage. The scent is intense and finely aromatic, with notes of bread crust, light vanilla and honey. The taste is dry, clean, elegant and particularly soft, with a persistence that enchants the palate.

Like any classy Trentodoc, this wine is an excellent aperitif and lends itself magnificently to being enjoyed throughout the meal, accompanying every convivial moment with refinement and style.
