In the suggestive vineyard, characterized by dolomitic limestone soil near the majestic Castle of Monreale - Königsberg, two noble vines grow with mastery: Chardonnay and Pinot Noir. This vineyard, one of the very few in the region structured as an authentic clos, is surrounded by woods and cultivated with the Guyot method for over 30 years, with vines coming directly from the renowned Champagne.

With a yield limited to 50 hl per hectare, the harvest takes place with great care in July, after careful thinning of the bunches. The grapes are harvested by hand and delicately arranged in boxes, preserving their integrity until pressing.

In the cellar, the first fermentation takes place in steel, followed by the classic method of refermentation in the bottle provided by the Trentodoc denomination. The maturation on the yeasts lasts for at least 48 months, giving the wine an extraordinary elegance. At disgorgement, no "dosage" is added, to preserve the natural characteristics of the wine intact, which benefit from favorable environmental factors and careful craftsmanship.

The result is a wine with a bright straw yellow color, with a cheerful, minute and continuous perlage. The aroma is intense and refined, with notes of green apple, bread crust and an elegant mineral nuance. The taste is dry, clean, elegant, savory and enveloping, with a pleasant persistent freshness.
